Ingredients:
250g Extra Lean Beef Mince
½ pack of Passata (Sieved Tomato)
Chilli powder (mild, medium or hot depending on personal taste)
Beef Stock Cube
1 clove of garlic
½ Red Onion
½ Red Pepper
4-5 button mushrooms
Wholegrain Rice
Sweet-corn
Peas
Prep:
Begin cooking the wholegrain rice (mine takes 35mins to cook)
Method:
- Finely chop garlic and red onion. Soften in a frying pan with spray oil.
- Add the extra lean beef mince and cook until browned.
- Add in the pepper and mushrooms.
- Crumble in the beef stock cube, add a little water to dissolve.
- Once all combined, add the ½ pack of passata & spice and stir.
- Leave all the ingredients to simmer for 15 minutes.
- Serve with wholegrain rice with sweet-corn and peas through in.
