One Chicken Breast-chopped
1/4 Red Onion-finely chopped
1 clove of Garlic-crushed
1/4 Yellow Pepper-sliced
1/4 Red Pepper-sliced
3-4 button Mushrooms-sliced
1/4 cup Kidney Beans
1 vegetable stock cube
1/2 carton of Passata
1 tsp Chili Pepper
1 tsp Cayenne Pepper
Salt & Pepper to season
2 - 3 tsp Quark
2 Calorie Controlled wraps
Method:
- Heat a sauce pan, spray with spray oil and add the chopped chicken breast.
- Add in the red onion and garlic and cook until softened & chicken is cooked through.
- Add in the remaining vegetables and cook for a few minutes.
- Add in the kidney beans and stir.
- Pour in the Passata and crumble in the stock cube. Add the spices.
- Allow to cook for 10 minutes.
- Season with salt and pepper.
- Spread quark on the wraps before filling with the chicken mixture.
- Enjoy!
