Fruit Crumble for 3pp


Simply peel & chop 1 cooking apple, 2 pears & 
throw in a handful of raspberries. 
Pop them in a saucepan with enough water to cover 
the base of the pan. 
Put on a medium heat & away to bubble away for around 
10 mins or until fruit is soft. 
I like to blitz the fruit with my hand held blender to make 
it nice & smooth but that's not essential.
I used 3tbsp of my stewed fruit for my crumble, 
I used the rest with my porridge. 

For the crumble itself I just used a tsp of oats & 
4 tsp of (rice) flour & a little sweetener. 
I mixed these together & then rubbed around 1.5 tsp of 
lowlow through it using fingertips until it became like breadcrumbs. 
Sprinkle over the stewed fruit in an oven proof dish & 
bake for around 15mins at 180' or until the crumble becomes crisp. 

And that's it! 
I worked mine out as 3pp but it may vary with regular flour. Xxx

Cauliflower, Cheese and Chips :)



I adapted something my Mum used to make me...Cauliflower, Cheese and Chips!

Yum Yum!

This is my go to comfort food. It is warm, indulgent and everything a good comfort food should be!

So for this I basically chopped up a load of cauliflower, covered it with a sauce made from phili, milk & a tiny bit of grated cheese. 

To make the cheese sauce, I just popped the phili, milk and grated cheese in a mug into the microwave for 1 minute and stirred it. Once all combined, I poured it over the cauliflower and into the over it all goes!

I weighed out 100g of aldi thick cut chips for 5pp and topped with a bacon medallion chopped on top!
Under 10pp for the whole meal and boy oh boy it is comforty goodness!

Beef bourguignon





I made this for my family who came up for dinner this week. It served 6, with a little left over. :)

800 g steak raw lean beef, cut into 3cm pieces

1 Red Onion 
2 clove garlic, chopped  
1 glass red wine  
1 whole dried bay leaf
1/2 tsp dried thyme
1 whole stock cube, I used the Knorr Stock Pot in Beef
Handful of mushroom, (button mushrooms)
1 Red Pepper.
Water
Corn flour (enough to thicken the sauce)

I basically browned off the beef with the garlic & onions in a pan, and then chucked everything into the slow cooker with enough water to cover the ingredients. I left it to slow cook for 6 hours on medium and when tender, I added corn flour to the stock to thicken the sauce. I served it with brown rice for 6pp so it worked out as 10pp for the whole meal. :)

Fancy a change for Breakfast?


I made some porridge and put fresh raspberries and pear in with it while it cooked.
( I cooked it with skimmed milk)
I added a tsp of honey, a pinch of mixed spice + good to go!
3pp for porridge, 1pp for Honey + zero for fruit.
Tasty and simple!

Brown Rice Stir Fry.


Brown rice (6pp for medium portion)
Sweet potato (1pp for 1/4 medium potato)
red peppers (0pp)
shallots (0pp)
Two bacon madalions grilled (1pp)
cooked with 2tbsp soy sauce (allowed 2pp)
and served with 1 tsp l.f phili on the side (allowed 1pp)

11pp in total. Very filling!!
SO tasty and I was stuffed!
I am actually ENJOYING food at the moment! Yum!

Choc Dip




I was having a weak moment a few weeks ago,
I was in dire need of a chocolate fix.
I raided the cupboards & came up with this instead.

Nutella & melted marshmallow dip.
literally banged two of the aldi marshmallows in a mug along with a small tsp of nutella & around 2 tsp of water (you could also use milk).

Heat for 10-15 seconds in microwave until marshmallows fluff up & then stir.
I dipped strawberries in mine & I'm all chocolated out without the PP damage! yum!

15g (heaped tsp) of nutella is 2pp & I only used 1/2 that (small tsp) for 1pp
10g of marshmallows (2 mallows) for 1pp.

So 2pp for the above! Enjoy with some yummy fruit!

My favourite salad



Yummy Filling Salad.
 
Broccoli, Beetroot, Peppers, Spinach.. (all free)
Sweet corn (1 tbsp. for whole recipe -1pp)
Feta (20g in whole recipe-2pp)
Hazelnuts crushed (10 nuts -2pp)...

Bacon Medallion (2 for 1pp)
Drizzle of fat free dressing.

I add huge amounts of the zero point foods, crumble up the feta, chop up the bacon & crush the nuts.
Mix it all together & its AMAZING.
 

6pp for all of the above & it serves around 4-6

Sweet Potato Lasagna


Yummy sweet potato lasagna with a side salad of chopped cooked beet root, peppers, spinach and sweet corn with a drizzle of low fat dressing.

I've pointed it as follows...

2 pp for 1/4 of a sweet potato
6 pp for amount of mince used in entire dish
1pp for the phili for white sauce
2pp for the low fat mozzarella
0 for all the veggies except for the sweet corn.
(11 pp for the lasagna but I halved it & put leftovers in fridge)

Lasagna:

  • Thinly slice s.potato and par-boil for 10 mins.
  • While cooking, dry fry lean mince with onions and garlic.
  • Once browned, add a tin of chopped tomatoes to the pan and allow to simmer.
  • For the white sauce, I used some low fat phili with a bit of skimmed milk to thin it out.
  • Layer as you would with a normal lasagna, topping off with a little grated fat reduced mozzarella.
  • Bake in the oven for around 30-40 mins and serve with side salad.

Feta and Pesto Pasta




This works out at 9/10pp per serving.

Whole grain pasta (4pp)
Red Pesto Sauce 1 tsp (1pp)
Garlic & an onion (0pp)...
Feta Cheese 10g (1.5pp)
Bacon Medallion (1pp)
Sweetcorn 1tbsp (1pp)

Cook pasta, soften garlic & onion, grill bacon & chop feta...
Once cooked stir in pesto, stir in feta, sweet corn, onions & garlic, crumble bacon and season.
